Create creepy edible eyeballs using sushi rice and nori, then float them on a warm bowl of your favorite red or orange soup. A hidden ramekin or zucchini noodles keeps the eyeballs afloat, while a Sriracha drizzle adds a spicy kick. This fun and simple recipe is perfect for a Halloween party or spooky dinner.

  1. Warm the soup on the stove or in a microwave, using whatever method you like.
  2. Place the sushi rice in a fine-mesh strainer and rinse under cold water until the liquid runs clear.
  3. Combine the rinsed rice and 1 cup of water in a medium saucepan. Bring to a full rolling boil over high heat.
  4. Once boiling, lower the heat to the minimum, cover tightly, and let simmer for 20 minutes.
  5. While the rice simmers, use kitchen scissors to cut the nori sheet into small circles. Put these aside for later.
  6. After 20 minutes, check that the rice is soft and fluffy. Fluff it with a fork, then move it to a bowl to cool until you can handle it comfortably.
  7. Take small amounts of the cooled rice and gently squeeze them in your palm. Shape each portion into a ball, then press a nori circle onto the center of each ball.
  8. To keep the eyeballs from sinking, place a small ramekin or dipping bowl upside down in the middle of your serving bowl before pouring in the soup. If you've included spiralized zucchini noodles, you can skip this step—the noodles will hold the eyeballs up without extra help.
  9. Drizzle Sriracha over the soup for a spicy kick (omit for children). Then gently place the rice-ball eyeballs on the surface.
