Directions
- Preheat the oven to 375°F. Halve a large pumpkin and remove the seeds. Place the pumpkin cut-side down on a baking sheet and roast for 45 minutes until it's tender.
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add chopped onion and minced garlic, and sauté until they're soft, about 5 minutes.
- Add the roasted pumpkin, 4 cups of vegetable broth, 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground nutmeg, salt, and pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
- Use an immersion blender to blend the soup until it's smooth.
- Stir in 1 cup of heavy cream and heat the soup through. Serve it warm.
