These spooky s'mores bars combine a graham cracker-oat base with melted milk chocolate and ghost-shaped marshmallows. After baking, the bars are briefly broiled to soften the chocolate and toast the marshmallows, then decorated with edible marker faces. They're perfect for Halloween parties and can be served warm or at room temperature.

  1. Set your oven to preheat at 350°F. Grease an 8x8-inch baking dish with butter, then line it with parchment paper so the edges hang over the sides. Butter the parchment as well.
  2. In a medium bowl, mix the flour, rolled oats, graham cracker crumbs, baking powder, and salt until combined.
  3. Using an electric mixer, cream together the melted butter and brown sugar. Beat in the egg until smooth, then gradually add the dry ingredients, mixing just until incorporated.
  4. Spread the dough evenly into your prepared pan, smoothing the top. Bake for 18 to 20 minutes, or until golden and set. Transfer to a wire rack and let cool completely.
  5. After the base has cooled, arrange the full-size milk chocolate bars on top—break the fourth bar into pieces to fully cover the surface. Place 12 ghost-shaped marshmallows over the chocolate, setting them face down so the features melt during broiling.
  6. Adjust the oven rack to the second highest position (the top spot might scorch the parchment). Switch the oven to low broil. Broil the bars for 1 to 2 minutes, until the chocolate softens and the marshmallows turn golden. Remove from oven and let cool briefly. If you have a black food coloring pen, draw eyes and little mouths on the ghost marshmallows. Use the parchment overhang to lift the whole slab out of the pan, then slice into bars. Serve warm or at room temperature.
