  2. In a medium bowl, beat together the powdered sugar, softened butter, olive oil, salt, and vanilla extract until well blended. In a separate small bowl, whisk the flour, cornstarch, and grated lemon zest until combined.
  3. Add the dry ingredients to the wet mixture and stir until a dough forms. Lightly knead the dough a few times on a work surface until smooth, then wrap it in plastic wrap and refrigerate for about 30 minutes.
