These Vampire Shortbread Halloween Cookies are buttery shortbread rounds with a raspberry jam center that looks like a bloody bite mark. After baking, they are drizzled with a red-tinted almond glaze for a creepy-cute finish perfect for Halloween parties.
Ingredients
Directions
- Set your oven to heat up to 350 degrees Fahrenheit.
- Using a large bowl, beat the butter and sugar until they are thoroughly mixed.
- Stir in the almond extract and both red and black food colorings, mixing them in completely.
- Gradually incorporate the flour, stirring until a soft dough forms and everything is evenly combined.
- Roll the dough into balls about 1½ inches in size (a medium cookie scoop is handy for uniform portions) and arrange them on a baking sheet that has been lightly greased.
- Press a clean finger into the center of each ball to create an indent for the jam filling.
- Combine the raspberry jam with additional red and black food coloring, then carefully spoon this mixture into the hollows (a baby food spoon works nicely).
- Bake the cookies for 14 to 16 minutes.
- While they are in the oven, whisk together the glaze ingredients: confectioners' sugar, almond extract, milk, and red food coloring.
- Once baked, let the cookies rest on the sheet for 1-2 minutes before moving them to a cooling rack or counter.
- While they are still warm, drizzle the prepared glaze over the tops.
