These white chocolate peanut butter cup cookies start with a soft peanut butter dough, baked just until set. Right out of the oven, you press a full-sized white chocolate peanut butter cup into each cookie, then let them cool to perfection. They're a sweet, decadent treat that's sure to be a hit.

  1. Set your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, use an electric mixer on medium speed to cream together the softened butter (3/4 cup, which is 1 1/2 sticks), peanut butter (1 cup), brown sugar (1 cup), and granulated sugar (1 cup) for about 30 seconds. Then add the vanilla (1 teaspoon) and eggs (2), and mix for another 10 seconds.
  3. Add the baking soda (1 1/2 teaspoons) and mix on low speed for 10 seconds. Then add the all-purpose flour (2 1/2 cups) and continue mixing until the flour is fully incorporated.
  4. Scoop the dough into balls, each about 3 tablespoons in size. Gently flatten each ball slightly before placing it on the prepared baking sheet.
  5. Bake at 350°F for 8 to 9 minutes. The cookies will look a bit underdone, but they'll continue baking on the hot sheet after you take them out. Ovens vary, so use your judgment and leave them in a minute longer if they seem very underbaked.
  6. As soon as you remove the cookies from the oven, press a full-sized white chocolate peanut butter cup into the center of each cookie.
  7. Let the cookies cool on the hot baking sheet for 10 minutes before transferring them elsewhere. If needed, pop the cookies in the fridge to help the chocolate re-harden.
  8. Wait until the cookies are completely cool and the chocolate is fully set before drawing or decorating.
