These witch finger cookies are a fun and eerie Halloween treat made from a simple sugar cookie dough. Shaped into fingers with knuckle details and topped with an almond 'fingernail' dipped in strawberry jam, they bake up spooky and tasty. - Cream the softened butter, powdered sugar, egg, vanilla, and almond extract (if using) in a large bowl until smooth.
- Whisk the flour and baking powder together in a separate bowl, then gradually add to the butter mixture, mixing until combined. Cover and refrigerate the dough for at least 1 hour.
- Set the oven to 325°F and lightly grease baking sheets.
- Shape dough portions into finger shapes, pinching each in two spots to form knuckles. Use the back of a paring knife to add fine lines for realistic knuckle texture.
- Dip whole almonds into strawberry jam and press one onto the tip of each finger cookie.
- Bake for about 20 minutes. If the cookies puff up, gently reshape them while still warm.
