This applesauce oatmeal bread combines whole wheat and all-purpose flours with cinnamon, allspice, ginger, and nutmeg for a warmly spiced loaf. Folded with old-fashioned oats and walnuts, it bakes up tender and flavorful. A simple sprinkle of oats and cinnamon on top adds a nice rustic finish.

  1. Preheat your oven to 350°F and lightly butter a 9-inch loaf pan.
  2. In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, allspice, ginger, and nutmeg.
  3. In another bowl, whisk the sugar, brown sugar, eggs, melted butter, vanilla, and applesauce until smooth.
  4. Pour the dry ingredients into the wet and stir until nearly combined, then add 1/2 cup of oats and the walnuts, mixing just until incorporated.
  5. Spread the batter evenly in the loaf pan, then sprinkle the remaining 2 teaspoons of oats and a pinch of extra cinnamon (about 1/8 teaspoon) on top.
  6. Bake for 55 to 65 minutes, until the top is golden and a toothpick inserted into the center comes out clean.
  7. Cool the bread on a wire rack before slicing. Store leftovers in an airtight container for up to a few days.
