This easy cranberry sauce quick bread combines whole wheat and all-purpose flours with warm spices like cinnamon, ginger, and allspice. Simply mix wet and dry ingredients, fold in nuts and dried cranberries, then bake until golden. It's a delicious way to use up leftover cranberry sauce, and it stores well for days.
Ingredients
Directions
- Grease a standard 9x5 inch loaf pan with butter and preheat the oven to 350°F.
- In a medium bowl, combine the whole wheat flour, all-purpose flour, salt, baking soda, baking powder, cinnamon, ginger, and allspice with a whisk. In a separate large bowl, whisk together the brown sugar, buttermilk, cranberry sauce, eggs, and melted butter.
- Add the dry mixture to the wet mixture, then fold in the chopped nuts and dried cranberries. Mix only until everything is evenly moistened. Transfer the batter to the prepared loaf pan.
- Bake for 40 to 45 minutes, or until the top is lightly golden and a toothpick inserted in the center comes out clean. Let the bread cool in the pan for about 10 minutes, then turn it out onto a wire rack. Serve warm or at room temperature. Once completely cool, keep in an airtight container.
