- Unfold the thawed puff pastry sheets on a lightly floured surface, then slice each sheet lengthwise into two long strips.
- Use kitchen scissors or a knife to peel off the sausage casings.
- Position a sausage along one long edge of a pastry strip, then roll it up snugly, pinching the ends shut with your fingers to seal. Do the same with the other three pastry strips and sausages.
- Gently stretch each rolled pastry a bit to make it longer, letting gravity help you elongate it as you hold it up.
- Arrange the sausage rolls on a baking sheet lined with parchment paper, curling them to resemble intestines.
- Whisk together the egg and water, then brush the mixture over the tops of the “intestines.”
