Ingredients
Directions
- In a small saucepan over low heat, melt 1 cup of semi-sweet chocolate chips with 1 tablespoon of coconut oil, stirring until smooth. Remove from heat and set aside to cool slightly.
- In a mixing bowl, combine 1/2 cup of creamy peanut butter, 1/4 cup of honey (or light corn syrup), and 1 teaspoon of vanilla extract. Stir in 1/2 cup of powdered sugar gradually until a stiff dough forms.
- Roll the peanut butter mixture into small bite-sized balls. Using a fork, dip each ball into the melted chocolate, coating evenly. Place on a parchment-lined baking sheet and refrigerate for at least 30 minutes until firm.
