Fantasy Fudge is a simple stovetop fudge made with chocolate chips, butter, evaporated milk, and marshmallow fluff. It sets up in a 9x13-inch pan and can be customized with nuts, cookies, or toffee bits. The fudge keeps well at room temperature for up to two weeks.

  1. Spray a 9x13-inch baking dish lightly with cooking spray, then line it with parchment paper so that about 2 inches of paper hang over the long sides.
  2. Put the chocolate chips into a microwave-safe bowl. Microwave on high, pausing to stir every 30 seconds, until completely smooth.
  3. In a medium saucepan set over medium-high heat, stir together the butter, evaporated milk, and marshmallow fluff. Attach a candy thermometer and cook, stirring from time to time, until the butter and fluff are fully melted and the mixture looks uniform.
  4. Add the sugar and stir until dissolved, then let the mixture come to a gentle boil. Keep stirring constantly to prevent scorching, and cook until the candy thermometer reaches 234°F. Without a thermometer, boil for 4 to 5 minutes until the mixture is slightly golden and smells like caramel.
  5. Take the pan off the heat and promptly fold in the melted chocolate until fully combined. Then stir in 1 cup of your chosen mix-ins. Pour the fudge into the prepared dish, scatter the remaining 1/2 cup mix-ins on top, and let it cool completely. Once set, slice into squares. Keep any leftover fudge tightly wrapped at room temperature; it will stay fresh for up to 14 days.
