Garlic & Thyme Smashed Sunchokes

These garlic and thyme smashed sunchokes are a simple yet flavorful side. After boiling until tender, each sunchoke is gently flattened and pan-fried with garlic and fresh thyme until crispy. Seasoned with salt and pepper, they're served hot for a deliciously earthy treat.

- Put the cleaned sunchokes into a big pot, then pour in cold water until they're submerged by about an inch. Toss in a generous pinch of salt.
- Put the lid on and bring to a boil. Let them cook until a fork slides in easily. Then drain and transfer to a large cutting board.
- Using a small skillet or a flat plate, press down on each sunchoke firmly but gently so they flatten out while still holding together. Do the same with the garlic cloves, pressing until they just start to split.
- Warm the olive oil in a large cast-iron skillet set over medium heat. Drop in the garlic cloves, arrange the sunchokes in a single layer, and scatter the thyme sprigs over top. Let them cook until the underside turns golden and crisp, about 5 minutes. Flip each sunchoke and cook the other side until equally golden and crispy, another 5 minutes.
- Sprinkle with salt and pepper to your liking and serve right away.
