Halloween Appetizer Eyeballs

These spooky eyeballs are a fun and easy Halloween appetizer. Smoked ham wraps around mozzarella balls with olive pupils, creating a ghoulishly delicious snack that can be made ahead and chilled.

- Drain the mozzarella ciliegines and pat them dry gently.
- Slice off about 1/3 to 1/2 of the bottom of each olive, adjusting based on the olive's size.
- Cut each ham slice in half widthwise.
- With a sharp paring knife, carve a hole into each mozzarella ball without going all the way through, creating a cavity for the olive.
- Insert an olive, pimento side up, into the center of each mozzarella ball.
- Accordion-fold each ham piece and wrap it around a mozzarella ball, tucking the ends underneath to secure.
- Place the assembled eyeballs in an airtight container and refrigerate until serving.
- They will keep for 2-3 days in the refrigerator.
