These Halloween cupcakes feature a moist vanilla cake with a hidden Oreo at the bottom, topped with cream cheese frosting and crushed Oreo 'dirt.' The star is a homemade fondant mummy Oreo, with white bandages and expressive little eyes perched on top.

  1. Preheat your oven to 350°F (180°C).
  2. Place paper liners in a 12-cupcake pan.
  3. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  4. In a separate bowl, combine milk and vegetable oil. Set aside.
  5. In the bowl of a stand mixer (or using a hand mixer), beat sugar and eggs on medium speed for about 2 minutes.
  6. Add vanilla extract and mix briefly.
  7. Add one-third of the flour mixture to the mixer. Mix on low speed until just combined, scraping down the sides as needed.
  8. Add half of the milk-oil mixture and mix until incorporated, scraping down the sides.
  9. Add another third of the flour mixture and mix until smooth, scraping down the sides.
  10. Add the remaining milk-oil mixture and mix until smooth, scraping down the sides.
  11. Add the last of the flour mixture and mix until smooth, scraping down the sides.
  12. Place one Oreo cookie in the bottom of each cupcake liner.
  13. Fill each liner about two-thirds full with batter.
  14. Bake for 20 to 24 minutes. Allow cupcakes to cool completely before frosting.
  15. Roll out white fondant thinly. Cut strips about 2 inches long and no wider than 1/8 inch. Lightly brush each strip with water and crisscross them over each Oreo (the ones for topping) to create mummy bandages.
  16. Cut small white fondant dots for eyes (two per mummy). Moisten the back and attach. Then add a tiny black fondant dot on each eye, or draw a dot with a black food coloring marker.
  17. In a mixer bowl, beat cream cheese and butter on medium speed until well combined. Add sifted powdered sugar and vanilla, then mix on medium for 2 to 3 minutes.
  18. Pipe or spread the cream cheese frosting onto each cupcake. Sprinkle crushed Oreos on top for 'dirt'.
  19. Place one mummy Oreo on top of each frosted cupcake.
