Halloween Deviled Eggs Are a Spooky Addition to Your Celebration

This recipe transforms basic deviled eggs into four creepy creatures: yellow mummies with caper eyes, purple one-eyed monsters, orange pumpkins with chive stems, and green spider nests topped with seeds. Each version uses a portion of the same yolk mixture tinted with different colors and decorated simply for a festive Halloween appetizer.

- Put 12 large eggs in a big saucepan and pour in cool water until the eggs are submerged by at least 1 inch. Bring the water to a boil over high heat, then take the pan off the burner. Put the lid on and allow the eggs to rest for 12 minutes. While they sit, get your decorations ready and prepare a bowl of ice water.
- Cut 2 chives into pieces about 1/2 inch long to use as stems for the pumpkin eggs. Fill a large bowl with ice and water to make an ice bath.
- Use a slotted spoon to move the eggs to a work surface. Gently tap each egg against the counter to create several cracks in the shell. Submerge them in the ice water for at least 1 minute. Peel the eggs, then slice each one in half lengthwise.
- Carefully push the egg yolks into a medium bowl. Use your fingers to remove any leftover yolk from the whites. Place the egg white halves cut-side up in a single layer on a serving platter.
- Mash the yolks with a fork until they are fully broken into fine crumbs. Add 1/3 cup mayonnaise, 2 teaspoons Dijon mustard, 1/2 teaspoon kosher salt, and 1/2 teaspoon black pepper. Continue mashing until you have a smooth paste. Adjust seasoning with more salt if needed.
- For yellow mummies: Put 1/4 cup of the yolk mixture into a small ziptop bag or piping bag. Snip off 1/2 inch from one bottom corner (or from the tip of a piping bag). Pipe the filling into 6 egg white shells. Gently press the filling smooth with your fingers. Place 2 capers on each mound to look like eyes. Put another 3 tablespoons of the yolk mixture into a separate bag, cut a 1/4-inch opening, and pipe zigzag lines across the eggs to resemble mummy wrappings.
- For purple one-eyed monsters: Scoop 1/4 cup of the yolk mixture into a small bowl. Add a drop of purple food coloring and stir until the color is even, adding more dye as needed to reach a purple shade. Spoon the mixture into 6 egg white shells and smooth the tops with your fingers. Place 1 olive slice on each mound to form a single eye.
- For orange pumpkins: Take 1/4 cup of the yolk mixture and put it in a small bowl. Mix in a drop of orange food coloring, adding more until the color is orange. Spoon the filling into 6 egg white shells and smooth the surface. Drag the tines of a fork down the filling from top to bottom to create ridges like a pumpkin. Stick a piece of chopped chive into the top of each mound to serve as a stem.
- For green spider’s nest: Combine 1/4 cup of the yolk mixture with a drop of green food coloring in a small bowl, adjusting the shade with extra drops as needed. Spoon the filling into the remaining 6 egg white shells and smooth the tops. Sprinkle 1/4 teaspoon of poppy seeds or black sesame seeds over each mound.
