These Halloween Jack-O'-Lantern Puff Pastry Pumpkin Hand Pies combine flaky puff pastry with a spiced pumpkin filling. Cut pumpkin shapes, carve faces, and bake until golden for a festive treat perfect for parties or a seasonal snack.

- Unfold the thawed puff pastry sheets and use a rolling pin to roll them out until each sheet is about 13 inches long, which will allow you to cut three rows of pumpkins.
- In a bowl, combine 1 cup pumpkin puree, 1 whole egg, 1/3 cup brown sugar, 1 teaspoon pumpkin pie spice, 1/2 teaspoon vanilla extract, 1/4 teaspoon salt, and 1 tablespoon half and half. Whisk until smooth and set aside.
- Spoon a generous amount of the spiced pumpkin filling onto the center of each pastry square, leaving a border around the edges.
- Using a pumpkin-shaped cookie cutter, cut out pumpkin shapes from half of the pastry squares. Place these cut-out shapes on top of the filled squares, aligning them with the bottom pumpkin shape.
- With a small sharp knife, carve Jack-o'-Lantern faces into the top pastry layer. Get creative with different expressions for each pie.
- To seal, lightly brush the edges of the bottom pastry with water, then press the top pastry layer on top. Use a fork to crimp the edges firmly.
- In a small bowl, whisk together 1 egg and 1 egg yolk to make an egg wash. Brush this mixture over the top of each hand pie for a golden finish.
- Place the hand pies on a prepared baking sheet and bake according to the original recipe's instructions until golden brown and flaky.
- Once baked and slightly cooled, serve these delightful Halloween treats at parties, share with loved ones, or enjoy as a seasonal snack.
