- Divide the Rice Chex into two equal portions, placing 4.5 cups in each of two separate bowls.
- In a saucepan, combine the white chocolate chips, ¼ cup of the peanut butter, and ¼ cup of the butter or margarine. Warm over low heat, stirring often, until the mixture is completely smooth. Stir in ½ teaspoon of the vanilla extract.
- Take the pan off the heat and drizzle the melted mixture over the first bowl of cereal, tossing to coat every piece. Transfer the coated cereal into a large resealable bag along with ¾ cup of the powdered sugar. Close the bag tightly and shake vigorously until the cereal is thoroughly dusted.
- Follow the same melting and coating process for the second bowl of cereal using the remaining milk chocolate chips, ¼ cup peanut butter, ¼ cup butter or margarine, and ½ teaspoon vanilla. Coat this batch in the remaining ¾ cup of powdered sugar using the bag-shaking method.
