These marshmallow monsters are a fun Halloween treat. Dip marshmallows in colored candy melts, add sprinkles, and use gel frosting to stick on candy eyeballs. A quick chill in the fridge sets everything perfectly.

  1. In separate small bowls, microwave colored candy melts in 30-second bursts, stirring between each, until fully melted. Using small bowls keeps the chocolate deep enough to submerge marshmallows nearly completely.
  2. Stir in a tiny bit of coconut oil to thin the chocolate, making it smooth and easier to work with for dipping.
  3. Insert a toothpick into the bottom of each marshmallow, then dip it into the melted chocolate, leaving a small white strip at the base. The toothpick makes dipping neat and prevents messy fingers when retrieving the marshmallow from the chocolate.
  4. Sprinkle the tops with your choice of sprinkles, then place the marshmallows in the refrigerator for at least 20 minutes to let the coating harden.
  5. Once set, remove from the fridge and use gel frosting as glue to attach candy eyeballs. If you apply the eyes while the chocolate is still soft, they'll slide down and look messy.
  6. Return the marshmallows to the fridge for another 20 minutes to ensure the eyes are firmly attached, then they're ready to serve.
