- In a mixing bowl, work the cold butter cubes into the flour until the mixture looks like coarse crumbs. Then drizzle in the ice water and mix until a dough forms. Wrap the dough in plastic and chill in the fridge for 30 minutes.
- While the dough rests, stir together the pumpkin puree, brown sugar, cinnamon, and nutmeg until evenly combined. Set the filling aside.
- On a lightly floured surface, roll the chilled dough out to about 1/8-inch thickness. Use a round cutter (about 4 inches wide) to cut out circles.
- Place a heaping spoonful of the pumpkin filling in the center of each dough circle. Fold the circle in half to form a half-moon shape, then press the edges together and crimp with a fork to seal. Brush the tops with beaten egg.
- Preheat your oven to 375°F. Arrange the pasties on a baking sheet lined with parchment paper and bake for 20 minutes, or until they turn golden brown.
