- Dust your countertop lightly with all-purpose flour, then lay out one of the thawed pastry sheets.
- Roll the dough gently until it measures roughly 9.5 by 9.5 inches.
- Fold the dough in half and press down lightly to mark a center line, then unfold it again.
- Slice along the natural folds and the center line to create six equal rectangles.
- Place the rectangles on the prepared baking sheet and put them in the refrigerator while you finish the other components.
- Flour your surface again, unfold the second pastry sheet, and roll it out to match the 9.5 by 9.5-inch size.
- Measure and cut strips about 1/4 to 1/2 inch wide from this second sheet using a ruler and a small knife.
- Take the tray out of the fridge and brush a little water along the edges of each rectangle with your finger.
- Spread 1 to 2 tablespoons of chocolate filling onto each rectangle, keeping the filling about 1/4 inch from the edges.
