- Wash and dry the apples thoroughly, then insert sticks into them before you start making the candy coating.
- In a medium saucepan, combine the granulated sugar, light corn syrup, and water.
- Attach a candy thermometer to the pan, ensuring the tip does not touch the bottom.
- Cook over medium-high heat until the mixture comes to a boil.
- Reduce the heat to medium and continue boiling until the thermometer reads 302°F (hard crack stage). Do not stir, as stirring can disrupt the temperature.
- While the candy cooks, spray a cookie sheet with non-stick cooking spray.
- Once the candy reaches 302°F, remove the pan from the heat.
- Quickly stir in the cinnamon oil, then add the electric green food coloring and stir gently until the color is evenly distributed.
- Tilt the pan to one side and dip an apple into the candy, swirling to coat it completely.
- Lift the apple above the pan and let excess candy drip back in.
- Place the coated apple on the prepared cookie sheet. Repeat with the remaining apples.
- Allow the candy to harden completely before adding any embellishments like a hat.
- Store the apples at room temperature for up to 2 to 3 days. Do not refrigerate, as they will become sticky.
