Irish Potato Candy is a sweet confection that looks like small potatoes. Made with cream cheese, coconut, and cinnamon, it's a fun and easy no-bake dessert. Refrigerate before serving, and they keep well for days.

  1. In a large bowl, use a handheld mixer on medium speed to beat the cream cheese, butter, vanilla, and salt until light and fluffy, about 1 minute. (A stand mixer with paddle attachment also works.) Scrape down the bowl sides with a rubber spatula. Add the confectioners' sugar and mix on low speed just until combined, about 30 seconds. Increase speed to medium and beat, scraping the bowl halfway, until smooth, about 1 minute. Scrape again, add the coconut, and beat on low until incorporated, about 30 seconds. Refrigerate until firm, about 30 minutes.
  2. Line a baking sheet with parchment paper. Place the cinnamon in a small bowl. Scoop tablespoon-sized portions of the coconut mixture into your hand and roll into a ball. Roll the ball in cinnamon, then shape into an oblong potato shape. Arrange on the prepared sheet. Repeat with remaining mixture. Refrigerate until ready to serve.
  3. These candies can be made up to 5 days ahead. Store in an airtight container in the refrigerator.
