These Jack-O'-Lantern Cheese Quesadillas are a whimsical twist on a classic snack. With a carved tortilla face, melted cheese, and a bell pepper stem, they're perfect for a Halloween meal or party. Serve with salsa, sour cream, or tomato soup for a cozy spooky dinner.

- Heat the oven to 375°F.
- Using a sharp paring knife, carve a Jack-O'-Lantern face into one tortilla. Carefully remove the cut-out pieces, trying not to tear the tortilla.
- Place the whole tortilla on a baking sheet. Spread the shredded cheese evenly over it, then cover with the carved tortilla.
- Bake for about 5 minutes, until the tortillas turn golden and the cheese is melted. For extra crispiness, turn on the broiler for 1–2 minutes, watching closely to avoid burning.
- Remove from the oven and insert a slice of green bell pepper between the two tortillas at the top to form a stem.
- Serve hot with salsa, sour cream, guacamole, or alongside tomato soup if desired.
