  1. Lay two 9-to-10-inch square puff pastry sheets (totaling 450 g) on a lightly floured counter.
  2. Moisten one short edge of the first sheet with water, then lay the second sheet on top so its end overlaps the dampened area. Press firmly to bond them into a single, continuous sheet measuring roughly 9 to 10 inches wide and 18 to 21 inches long.
  3. Gently roll the combined dough until it reaches a width of about 12 inches. Alternatively, if using homemade or store-bought dough, roll it directly into a rectangle that is 12 inches wide and at least 22 inches long.
  4. Position the pastry so one of the shorter ends faces you.
  5. Spread a thin layer of the 115 g softened unsalted butter across the entire surface, leaving a 1-to-1.5-inch strip of bare dough along the far short end.
  6. Starting from the near short end, roll the dough tightly into a spiral, ensuring there are no gaps. Continue rolling until you reach the un-buttered strip.
  7. Brush water onto the bare dough strip, then pinch the edge to seal the log. Wrap the log in plastic wrap and refrigerate it to chill.
  8. Remove the chilled log from the fridge and plastic wrap. On a lightly floured surface, roll it evenly until it forms a uniform cylinder with a 2-inch diameter.
  9. Trim the uneven ends of the log to create straight, even edges.
  10. Using a very sharp knife, slice the log into rounds approximately 1 cm (⅜ inch) thick.
  11. Dust both sides of each round with flour. Press the center gently with your thumb three to four times, rotating the disc between presses, to form a shallow cup without piercing the dough.
  12. Shift your pressure from the center toward the edges while rotating the disc to thin the sides and expand the cup shape, keeping the rim thick.
  13. Press each pastry disc into the cavities of a mini muffin pan, molding it to the bottom and sides. The top edges may stick out slightly, which is fine.
  14. Repeat until all cavities in two mini muffin pans are lined, yielding about 48 tart shells. Keep the tray and any extra dough in the fridge until ready to fill.
  15. While the pastry chills, prepare the filling by finely chopping 50 g pickled jalapeños, 3 tbsp bacon crumbles, and 3 tbsp chopped chives or green onions.
  16. In a large bowl, combine the chopped ingredients with 455 g softened cream cheese and 150 g (1 ¼ cups) grated cheddar cheese.
  17. Mix thoroughly with a spatula or hand mixer. Taste and add black pepper if desired, though salt may not be necessary.
  18. Transfer the filling to a piping bag or set aside in the bowl.
  19. Wash and dry 15 fresh jalapeños, then slice them into ½-inch thick rounds. Remove the white pith and seeds from the center of each slice using a knife or small cutter.
  20. Preheat your conventional oven to 425°F (218°C).
