Marshmallow Spider Web Cupcakes

These marshmallow spider web cupcakes start with rich chocolate cupcakes and creamy cocoa frosting. After chilling the frosted cupcakes, you stretch melted marshmallow into thin webs and wrap them around each cupcake for a creepy, delicious decoration.

- Preheat your oven to 350°F.
- In a mixer bowl, combine the sugar, flour, cocoa, baking powder, baking soda, and salt.
- Add the eggs and mix until incorporated.
- Pour in the milk, vegetable oil, and vanilla; mix for 2 to 3 minutes until smooth.
- Stir in the boiling water. The batter will be very thin.
- Line a muffin tin with paper liners.
- Fill each liner with just under 1/4 cup of batter, about two-thirds full.
- Bake for 18 minutes, or until a toothpick inserted comes out clean. Cool the cupcakes completely.
- For the frosting: Place the melted butter in a mixer bowl and beat in the cocoa.
- Add 3 cups of powdered sugar and mix well. Pour in 1/3 cup of milk and mix again. Add the remaining 3 cups of powdered sugar and mix, then the remaining 1/3 cup of milk and mix. Stir in the vanilla. If you want a thicker frosting, add more powdered sugar; for a thinner frosting, add more milk.
- Frost the cooled cupcakes, then refrigerate them for about 10 minutes to firm up the frosting.
- In a microwave-safe bowl, combine the 16 large marshmallows with 1-2 teaspoons of water. Microwave for about 30 seconds, then stir. Repeat heating and stirring until the marshmallows are fully melted.
- Using your fingers, pick up a small amount of the melted marshmallow and stretch it into a web shape. Carefully drape and wrap the marshmallow web over the chilled frosting and around the cupcake. The frosting must be cold for the web to hold.
