This spooky ice cream combines a creamy mint chocolate chip base with crunchy homemade chocolate pieces and adorable mini witch hats made from cookies. The recipe uses sweetened condensed milk and heavy cream for a rich, no-churn texture. Freeze overnight for a perfectly ghoulish Halloween dessert.

- Prepare the witch hats: Flip the mini Fudge Stripes cookies so the chocolate side faces up. Pipe a blob of orange icing in the center of each cookie, then press a chocolate chip into the icing to form the hat. Set aside.
- Make the chocolate bits: Melt 1 cup of chocolate almond bark according to package directions. Stir in 1 teaspoon of coconut oil until fully combined.
- Spread the melted chocolate mixture evenly onto a sheet of parchment paper or a silicone mat. Let it sit for about 10 minutes until hardened.
- Once set, chop the chocolate into tiny pieces and set aside.
- In a large bowl, whip together 2 cups heavy cream and 1/2 cup powdered sugar using an electric mixer on high speed until stiff peaks form, about 5 to 7 minutes.
- Add 2 teaspoons of Mint Chocolate Chip Extract and a few drops of green food coloring to the whipped cream. Mix until combined, then gently fold in the entire can of sweetened condensed milk.
- Fold in about 2 cups of the chopped chocolate bits. Pour the mixture into a loaf pan, top with the remaining chocolate bits, and add the witch hats (or save them for serving). Freeze for several hours or overnight until completely firm.
