Mini Halloween Cheesecakes

These mini cheesecakes are easy to make and feature a graham cracker crust, creamy filling, and festive orange color. After baking and chilling, top them with Halloween sprinkles for a fun treat that's sure to delight guests of all ages.

Directions
- Set your oven to 325°F and place paper liners in a mini muffin tin.
- Combine the graham cracker crumbs with the melted butter, then press about a spoonful of the mixture into the bottom of each liner.
- In a bowl, beat the softened cream cheese and sugar until the mixture is smooth. Beat in the eggs one at a time, then mix in the vanilla and a few drops of orange food coloring if desired.
- Spoon the cream cheese mixture into the prepared cups, filling them almost to the top.
- Bake for 15 to 18 minutes, or until the cheesecakes are set. Let them cool completely, then refrigerate for at least 2 hours.
- Just before serving, garnish each mini cheesecake with Halloween sprinkles.
