These festive dirt cups feature a crushed Oreo base, a creamy orange cream cheese layer, and a rich chocolate pudding layer, all topped with green coconut 'grass' and candy pumpkins. Perfect for Halloween parties, they're easy to assemble in individual cups and can be made ahead. Each cup is a mini pumpkin patch that kids and adults will love.

  1. Pulse the entire 24.16 oz package of Oreos in a food processor until finely crushed. Set the crumbs aside.
  2. Put the 1/2 cup sweetened coconut flakes in a lidded container. Add a drop or two of green gel food coloring, close the lid, and shake until the coconut turns green. Add more coloring drop by drop, shaking after each, until you reach the desired shade. Set aside.
  3. In a large bowl, beat the room-temperature cream cheese with an electric hand mixer for a few seconds. Gradually add the 2 1/2 cups powdered sugar, about 1 cup at a time, beating well after each addition. Then beat in half of the 16 oz Cool Whip, followed by the rest, until smooth and creamy. Add several drops of orange gel food coloring and beat well; continue adding coloring and beating until the desired orange color is achieved. Refrigerate this mixture while you prepare the pudding.
  4. In another large bowl, combine both boxes (3.9 oz each) of chocolate instant pudding mix with the 48 oz heavy whipping cream. Beat with an electric hand mixer for about 2 minutes, until well combined and stiff peaks form. Refrigerate until ready to use.
  5. Place 1 tablespoon of Oreo crumbs into the bottom of each of eighteen 9-ounce clear plastic cups.
  6. Using a 1.5-ounce ice cream scoop, divide the orange cream cheese mixture evenly among the cups (about 3 tablespoons per cup). Smooth the top to level it.
  7. Sprinkle another tablespoon of Oreo crumbs over the orange layer, covering it completely.
  8. Using a 2-ounce ice cream scoop, divide the chocolate pudding mixture evenly among the cups. Smooth the pudding to level it.
  9. Add one more tablespoon of Oreo crumbs on top of the pudding, covering the entire surface.
  10. Place 3 Mello Creme Pumpkins on top of each cup, pressing them slightly into the crumbs. Sprinkle a pinch or two of the green coconut over each.
  11. Cover each cup with plastic wrap (such as Glad Press 'N Seal) and refrigerate until serving.
  12. Makes 18 Pumpkin Patch Dirt Cups.
