- Start by heating your oven to 400°F. Prepare a large baking sheet by lining it with parchment paper or a silicone baking mat.
- Grab a small mixing bowl and stir together the pumpkin puree, brown sugar, and pumpkin pie spice until well blended.
- Lightly flour your work surface and roll the pie dough until it reaches a 1/4-inch thickness. Cut out roughly 20 pumpkin shapes using a cookie cutter. Take a paring knife and carefully carve facial features into half of those pumpkin shapes.
- Lay one solid pumpkin shape on your floured surface. Spoon a heaping teaspoon of the pumpkin mixture onto the center and gently spread it out close to the edges. Moisten your fingertip with water and trace the outer rim of the dough to help it stick. Place a pumpkin shape with a carved face on top and press the edges firmly to seal. Continue this process with the rest of the dough and filling.
- Arrange the assembled pastries on your prepared baking sheet. Bake them for 18 minutes, or until the crust turns a nice golden brown.
