- Set up a double boiler by placing a saucepan with water and a bowl on top.
- Mix all the pumpkin ganache ingredients in the bowl.
- Stir occasionally until the mixture is smooth and melted.
- Remove the bowl from the heat.
- Pour the pumpkin ganache into a shallow dish, cover it with plastic wrap, and let it cool for about an hour.
- Prepare the chocolate pumpkins by filling a disposable pastry bag with melted chocolate.
- Cut a small piece off the tip of the pastry bag to control the flow of chocolate.
- Pipe the chocolate into the cavities of a pumpkin-shaped candy mold, tapping gently to remove air bubbles.
- Invert the mold over a bowl of melted chocolate, allowing most of the chocolate to drip out, leaving a thin shell.
- Use a spatula to scrape off excess chocolate from the top of the mold.
- Chill the chocolate-filled mold in the refrigerator or freezer until the chocolate sets.
- Spoon the cooled pumpkin ganache into a pastry bag and pipe it into each chocolate mold.
- Let the ganache firm up for about an hour.
- Pour a thin layer of chocolate over the top of the ganache, spreading it evenly and scraping off excess.
- Chill the chocolate until set, then unmold the truffles.
- Let the truffles come to room temperature before enjoying.
