These Halloween s'mores start with from-scratch marshmallows packed with gummy candies. You'll use a candy thermometer to perfect the marshmallow base, then fold in worms and other gummies. After setting, toast the marshmallows and assemble classic s'mores with graham crackers and chocolate.

  1. Grease a large baking pan (like a bread pan) with a thin layer of butter and set it aside.
  2. In a small bowl, whisk the two packets of gelatin with half a cup of cold water and allow it to rest for 5 minutes.
  3. Combine the leftover quarter cup of water, the granulated sugar, a quarter cup of the light corn syrup, and the salt in a saucepan. Place over high heat, bring to a boil, and continue heating until a candy thermometer reads exactly 240°F — this thermometer is crucial to prevent crystallization.
  4. While the sugar mixture heats, microwave the gelatin mixture for about 30 seconds until it melts. Transfer it to a large mixing bowl, pour in the remaining quarter cup of corn syrup, and whisk to combine.
  5. Once the sugar syrup hits 240°F, gradually drizzle it into the gelatin mixture while mixing continuously. Then turn the mixer to high speed and beat for 10 minutes. Add the vanilla extract and keep mixing until stiff peaks form.
  6. Act fast before the marshmallow sets: pour the mixture into the greased pan. Gently fold the gummy candies into the marshmallow, then use a spatula to even out the top. Press a few extra gummies onto the surface so some marshmallows appear to have worms poking out.
  7. Let the marshmallow block rest at room temperature for 6 hours. For clean cuts, butter your knife before slicing. You can cut the marshmallows into small squares or any shape you prefer.
  8. Now build your s'mores: heat a marshmallow over an open flame or microwave it for 5 seconds, then sandwich it between two graham crackers with a piece of melting chocolate.
