- Set your oven to 350°F and lightly coat a 12-cup muffin tray with grease.
- Combine the flour, baking soda, cinnamon, nutmeg, and salt in a small bowl.
- In a separate medium bowl, use a fork to whisk together the sugar, oil, eggs, and vanilla. Stir in the pumpkin puree until smooth. Gradually incorporate the dry mixture, mixing only until no streaks remain.
- Distribute the batter evenly among the 12 muffin cups. Bake for 30 minutes, or until a toothpick inserted in the center emerges clean. Let the muffins rest in the pan on a wire rack for 10 minutes, then transfer them to the rack to cool completely.
- These muffins are delicious either warm or at room temperature. To reheat, microwave each on high for 20-25 seconds. Store any leftovers in an airtight container.
