Warm mushroom, chestnut, and bacon salad

This warm salad combines sautéed oyster mushrooms, roasted chestnuts, and crispy bacon over a bed of bitter greens, all dressed in a simple red wine vinaigrette. It's a perfect autumn starter or light main dish that comes together quickly.

- Heat the olive oil and butter together in a small skillet over medium heat. Add the diced bacon and cook, stirring every so often, until it becomes crisp. Use a slotted spoon to transfer the bacon to a paper towel-lined plate.
- Add the sliced oyster mushrooms to the skillet with the rendered fat. Cook, stirring occasionally, until they soften and start to brown. Stir in the minced garlic and halved chestnuts, and cook for about 2 minutes. Season with sea salt and black pepper to your liking, then pour in the red wine vinegar and mix well.
- Divide the greens (such as radicchio and frisee) equally between two salad plates or bowls. Spoon the mushroom-chestnut mixture over the greens, including all the pan juices as dressing. Sprinkle the crispy bacon on top and serve right away.
