These apple cider muffins combine warm spices, sweet apple cider, and mini chocolate chips for a delightful fall bake. The batter comes together quickly and bakes up tender with a slightly crisp top. Let them cool just a few minutes before enjoying.

  1. Heat your oven to 350°F and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and apple pie spice.
  3. In another bowl, beat the eggs, then mix in the oil, apple cider, and milk until combined.
  4. Pour the wet ingredients into the dry and stir gently until only a few lumps remain (the batter will be somewhat thin).
  5. Fill each muffin cup about two-thirds full with batter.
  6. Sprinkle chocolate chips evenly over the top of the batter.
  7. Bake for 20 to 22 minutes, or until a toothpick inserted in the center comes out mostly clean.
  8. Let the muffins rest in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
