These apple butter oatmeal muffins combine the rich flavor of apple butter with warm spices like cinnamon, allspice, and nutmeg. The batter is studded with rolled oats and topped with a sprinkle more for texture. Bake them for about 15–18 minutes for a delicious, tender muffin that tastes like autumn.

  1. Line a muffin tin with paper liners or lightly grease it with cooking spray. Preheat your oven to 350°F.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, allspice, and nutmeg. Set this bowl aside.
  3. In another bowl, whisk together the sugar, light brown sugar, eggs, melted unsalted butter, vanilla extract, and apple butter until smooth. Pour this mixture into the dry ingredients and stir until almost combined, then fold in 1/2 cup of rolled oats until just mixed.
  4. Divide the batter evenly among the 12 muffin cups. Sprinkle the remaining 2 teaspoons of rolled oats over the tops.
  5. Bake for 15 to 18 minutes, until the edges are golden and a toothpick inserted into the center comes out clean. Let the muffins cool in the tin, then remove. Serve warm or at room temperature. Store leftovers in an airtight container.
