These homemade apple fritters feature tart apple chunks in a fluffy, spiced batter, deep-fried until golden and topped with a cider glaze. The recipe uses fresh apple cider and warm spices for authentic autumn flavor. A perfect dessert or breakfast treat, they're best enjoyed warm after a short rest.

- Lay the diced apples in a single layer on a clean kitchen towel or several sheets of paper towel. Cover them with another towel or more paper towel and press down gently to extract excess moisture. Set aside to rest.
- Prepare a baking sheet by covering it with paper towels and setting a wire cooling rack over the top. Keep this ready.
- In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, salt, cinnamon, nutmeg, and allspice. Whisk thoroughly.
- In a separate glass measuring cup or small bowl, whisk together the apple cider, melted butter, eggs, and vanilla extract.
- Fold the diced apples into the dry ingredients. Gradually add the liquid mixture, stirring continuously, until everything is evenly incorporated.
- Heat the cooking oil in a Dutch oven until it reaches 350°F. Using a 1/3-cup measure, drop spoonfuls of batter into the hot oil. If needed, gently press the fritters down to flatten them a bit. Fry for 2 to 3 minutes until the underside is golden brown, then flip with a slotted spoon and cook the other side for another 2 to 3 minutes. Fry about three fritters at a time. Once done, transfer them with the slotted spoon to the prepared wire rack. Allow the oil to return to 350°F before starting the next batch, being careful not to overheat or let it cool too much. Continue until all batter is used.
- In a small bowl, whisk together the powdered sugar, cinnamon, nutmeg, and allspice. Add the apple cider one tablespoon at a time, stirring until you achieve a glaze that pours smoothly but holds its shape (about 3 tablespoons should do). After the fritters have cooled for roughly 10 minutes, spoon a generous amount of glaze over each one. Allow the glaze to set before serving. Enjoy!
