This applesauce oatmeal bread combines whole wheat and all-purpose flours with cinnamon, allspice, ginger, and nutmeg for a warmly spiced loaf. Folded with old-fashioned oats and walnuts, it bakes up tender and flavorful. A simple sprinkle of oats and cinnamon on top adds a nice rustic finish.

- Preheat your oven to 350°F and lightly butter a 9-inch loaf pan.
- In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, allspice, ginger, and nutmeg.
- In another bowl, whisk the sugar, brown sugar, eggs, melted butter, vanilla, and applesauce until smooth.
- Pour the dry ingredients into the wet and stir until nearly combined, then add 1/2 cup of oats and the walnuts, mixing just until incorporated.
- Spread the batter evenly in the loaf pan, then sprinkle the remaining 2 teaspoons of oats and a pinch of extra cinnamon (about 1/8 teaspoon) on top.
- Bake for 55 to 65 minutes, until the top is golden and a toothpick inserted into the center comes out clean.
- Cool the bread on a wire rack before slicing. Store leftovers in an airtight container for up to a few days.
