Ingredients
Directions
- Set your oven to 350°F and coat the insides of three 9-inch round cake pans with baking spray; set them aside.
- In a medium bowl, whisk together the whole milk and vanilla extract until combined; set aside.
- Using a stand mixer, cream the softened butter and granulated sugar together until the mixture is light and fluffy.
- In a large bowl, whisk together the flour and baking powder.
- Gradually add the milk mixture and the flour mixture alternately to the butter mixture, mixing on low to medium speed until just combined.
- In another large bowl, beat the egg whites with a hand mixer until stiff peaks form.
- Gently fold the beaten egg whites into the cake batter until evenly incorporated.
- Divide the batter evenly among the three prepared cake pans.
- Bake for 23–26 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes cool completely in the pans before removing them.
- Transfer the cooled cakes to a cutting board.
- Use a cake slicer to trim off the domed tops so the layers are flat.
- Place one cake layer on the 10-inch round cake board.
- In a stand mixer, beat the butter, powdered sugar, vanilla, and heavy cream together until stiff peaks form, about 5–7 minutes.
- Scoop about 1 cup of frosting into the large piping bag fitted with a star tip.
- Spread about 1 cup of frosting over the first cake layer using an angled spatula.
- Place the second cake layer on top of the frosting.
- Spread another cup of frosting evenly over the second layer.
- Set the final cake layer on top of the second layer of frosting.
- Use the remaining frosting to cover the entire cake, smoothing it with a spatula.
- Pipe blood drips along the edges of the cake using the red cookie icing.
- Cover the top of the cake with the red icing and let it harden.
- With the large piping bag, pipe dollops of frosting on top of the cake.
- When serving, use the Wilton red glitter piping gel to pipe blood drips along the sides of each cake slice.
- Enjoy your spooky Bloody Vampire Layer Cake!
