A rich vanilla cake layered with buttercream and topped with blood-red icing and glitter gel. Perfectly spooky for Halloween parties, this cake is as fun to make as it is to eat.

Ingredients

Directions

  1. Set your oven to 350°F and coat the insides of three 9-inch round cake pans with baking spray; set them aside.
  2. In a medium bowl, whisk together the whole milk and vanilla extract until combined; set aside.
  3. Using a stand mixer, cream the softened butter and granulated sugar together until the mixture is light and fluffy.
  4. In a large bowl, whisk together the flour and baking powder.
  5. Gradually add the milk mixture and the flour mixture alternately to the butter mixture, mixing on low to medium speed until just combined.
  6. In another large bowl, beat the egg whites with a hand mixer until stiff peaks form.
  7. Gently fold the beaten egg whites into the cake batter until evenly incorporated.
  8. Divide the batter evenly among the three prepared cake pans.
  9. Bake for 23–26 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let the cakes cool completely in the pans before removing them.
  11. Transfer the cooled cakes to a cutting board.
  12. Use a cake slicer to trim off the domed tops so the layers are flat.
  13. Place one cake layer on the 10-inch round cake board.
  14. In a stand mixer, beat the butter, powdered sugar, vanilla, and heavy cream together until stiff peaks form, about 5–7 minutes.
  15. Scoop about 1 cup of frosting into the large piping bag fitted with a star tip.
  16. Spread about 1 cup of frosting over the first cake layer using an angled spatula.
  17. Place the second cake layer on top of the frosting.
  18. Spread another cup of frosting evenly over the second layer.
  19. Set the final cake layer on top of the second layer of frosting.
  20. Use the remaining frosting to cover the entire cake, smoothing it with a spatula.
  21. Pipe blood drips along the edges of the cake using the red cookie icing.
  22. Cover the top of the cake with the red icing and let it harden.
  23. With the large piping bag, pipe dollops of frosting on top of the cake.
  24. When serving, use the Wilton red glitter piping gel to pipe blood drips along the sides of each cake slice.
  25. Enjoy your spooky Bloody Vampire Layer Cake!
