These homemade candied apples are coated in a glossy red cinnamon syrup that hardens to a crisp shell. With just a few simple ingredients and a candy thermometer, you can create this iconic fall treat. Let them cool completely for the perfect crunchy bite.

- Insert a lollipop stick into the stem end of each apple, pushing about halfway through. Set aside. Line a baking sheet with parchment paper and spray with cooking spray.
- In a medium saucepan, combine sugar, 1 cup water, red cinnamon candies, corn syrup, and red food coloring. Bring to a boil over medium-high heat. Attach a candy thermometer and continue boiling until it reaches 300°F to 305°F, about 20 minutes. Remove from heat, carefully stir in vanilla, and let the mixture stop bubbling.
- Quickly dip each apple three-quarters of the way into the syrup, hold it above the pot to let excess drip off, then place on the prepared baking sheet. Repeat with remaining apples. Allow to cool completely before serving.
