These homemade chocolate hand pies feature a flaky, buttery crust filled with rich semi-sweet chocolate ganache. Decorate with edible googly eyes right after baking for a fun, spooky effect. Follow the detailed steps to create rectangular lattice-topped pies and round crimped pies.

  1. In a stand mixer, combine 2 3/4 cups flour, 1 1/4 tsp salt, and 2 tsp sugar. Mix until just combined. Add the cold butter cubes and mix on low-medium until the dough forms crumbs up to 1/2 inch in size. Add 7 tbsp ice water and continue mixing. Test by pinching a small amount; if it doesn't hold together, add 1-2 more tbsp water. The dough should be crumbly but cohesive, not a smooth ball.
  2. Divide the dough in half. Place each half between two sheets of plastic wrap and roll into a flat disc about 1/4 inch thick. Refrigerate for at least 1 hour.
  3. Coarsely chop the 4 oz semi-sweet chocolate bar and place in a small bowl. Warm 1/2 cup heavy cream in a saucepan over medium heat until it just begins to simmer, then immediately remove from heat. Pour the hot cream over the chocolate and stir until smooth and fully combined (it may look separated at first but will come together).
  4. Set the chocolate filling aside to cool and thicken slightly.
  5. Remove one chilled dough disc from the fridge and plastic wrap. Cut it into 3x4 inch rectangles (or desired shapes). Cut the other disc into thin strips, about 1/8 to 1/4 inch wide, for the lattice tops.
  6. Crimp the edges of each rectangle base. Generously spread 2-3 tablespoons of the chocolate filling onto the base. Arrange the dough strips in a haphazard criss-cross pattern over the filling. Crimp the strips together with the base edges to seal. Brush the tops with beaten egg wash. Bake at 375°F (or as appropriate) for about 25 minutes, until light golden brown.
  7. Gather any leftover dough strips, roll them together, and chill again for about 20 minutes until firm enough to handle.
  8. Roll out the leftover dough to 1/4 inch thickness. Cut out round shapes. Place about 2-3 tbsp of filling on half the rounds, top with remaining rounds, and crimp edges all around with a fork. For plain hand pies, cut 2-3 small slits in the top crust for venting. Bake for 20-25 minutes until golden.
  9. As soon as the hand pies come out of the oven, press edible googly eyes onto the top crust. Allow to cool completely before serving.
