Our own summary of the original by Jennifer — the full post and photos live at jenaroundtheworld.com.
These eyeball Halloween pumpkin cake pops start with a spiced cake mix blended with pumpkin puree and frosting. After shaping and freezing, they're dipped in white chocolate, topped with green drizzle, candy eyeballs, and sugar crystals for a eerily cute dessert.
Ingredients
Directions
- Combine the cake mix, 10 ounces of pumpkin puree, and 2 teaspoons of pumpkin pie seasoning. Bake according to the package directions, then let the cake cool completely.
- Crumble the cooled cake into a large bowl using your hands.
- Add half a tub of vanilla frosting and mix until the mixture holds together when pressed into a ball.
- Use a cookie scoop to portion the mixture into balls. Roll each ball between your palms until smooth.
- Place the balls on a parchment-lined baking sheet and freeze for 15 to 20 minutes.
- Melt the 12-ounce bag of white melting chocolates. Dip each frozen ball into the melted chocolate, then return it to the parchment paper.
- Melt the 6 ounces of green melting chocolates and drizzle it over the tops of the coated balls. Place a candy eyeball on each, then sprinkle with white sugar crystals.
- Refrigerate or freeze the cake pops for about 5 minutes to set. Enjoy!
