Fantasy Fudge is a simple stovetop fudge made with chocolate chips, butter, evaporated milk, and marshmallow fluff. It sets up in a 9x13-inch pan and can be customized with nuts, cookies, or toffee bits. The fudge keeps well at room temperature for up to two weeks.
Ingredients
Directions
- Spray a 9x13-inch baking dish lightly with cooking spray, then line it with parchment paper so that about 2 inches of paper hang over the long sides.
- Put the chocolate chips into a microwave-safe bowl. Microwave on high, pausing to stir every 30 seconds, until completely smooth.
- In a medium saucepan set over medium-high heat, stir together the butter, evaporated milk, and marshmallow fluff. Attach a candy thermometer and cook, stirring from time to time, until the butter and fluff are fully melted and the mixture looks uniform.
- Add the sugar and stir until dissolved, then let the mixture come to a gentle boil. Keep stirring constantly to prevent scorching, and cook until the candy thermometer reaches 234°F. Without a thermometer, boil for 4 to 5 minutes until the mixture is slightly golden and smells like caramel.
- Take the pan off the heat and promptly fold in the melted chocolate until fully combined. Then stir in 1 cup of your chosen mix-ins. Pour the fudge into the prepared dish, scatter the remaining 1/2 cup mix-ins on top, and let it cool completely. Once set, slice into squares. Keep any leftover fudge tightly wrapped at room temperature; it will stay fresh for up to 14 days.
