Create a carrot pumpkin with veggie dip eyes and a cucumber smile, then whip up pepperoni-faced mini pizzas and a creepy snack mix with spooky names. All recipes use simple ingredients and are perfect for Halloween gatherings.
Ingredients
Directions
- Arrange a few baby carrots into a rough oval shape to form the pumpkin's outline. Then fill the center completely with the remaining carrots.
- Take out some carrots from the center to create a space for the mouth. Stack those removed carrots on top of the others to add height.
- Lay halved cucumber slices into that gap to form a spooky grin.
- Spoon your veggie dip into small bowls and nestle them into the carrot arrangement for the eyes and nose.
- Cut the stem from the broccoli crown and set the broccoli on top of the carrot pumpkin as the stem.
- Preheat your oven to 350°F. Split the English muffins into 12 halves and lay them on a dry baking sheet. Top each half with as much pizza sauce as you like, then scatter mozzarella over the sauce. Bake for 8 to 10 minutes, until the cheese is mostly melted.
- While those bake, cut each pepperoni slice into four pieces, then trim away the rounded edge from each quarter to leave a triangle shape.
- Take the English muffins out and arrange the pepperoni triangles onto each to make eyes and a nose. Use the leftover curved pepperoni scraps to fashion a zigzag mouth.
- Put them back in the oven for another 7 to 10 minutes, until they are hot and bubbly.
- Toss all the listed snack ingredients into a big bowl and stir them together.
- Transfer the mix to an airtight container. Tape a list of the spooky-named ingredients to the container, writing it in a shaky hand or a creepy font for effect.
