- Arrange a few baby carrots in an oval shape on a tray to form the pumpkin's outline. Then fill the oval with the remaining carrots to create a solid pumpkin shape.
- Pull out enough carrots from the bottom to make room for a smile. Place those removed carrots on top of the existing ones to keep the shape.
- Fill the gap you made with cucumber slices that have been cut in half, forming the pumpkin's grin.
- Spoon veggie dip into small ramekins or bowls. Nestle these into the carrot pumpkin where the eyes and nose should go.
- Cut the stem off the broccoli head and set the florets on top of the carrot pumpkin to act as the stem.
- Heat your oven to 350°F. Split each English muffin into two halves, making 12 total, and lay them on an ungreased baking sheet. Spread pizza sauce over each half, then top with shredded mozzarella. Bake for 8 to 10 minutes, until the cheese is largely melted.
- While those bake, cut each pepperoni slice into four pieces. Trim the curved edge off each piece to form a small triangle.
- Take the muffins out of the oven. Arrange three pepperoni triangles on each muffin to resemble eyes and a nose. Use the leftover curved pepperoni pieces to make a zigzag mouth.
- Put the muffins back in the oven and bake another 7 to 10 minutes, until heated through.
- In a large mixing bowl, combine all the snack mix ingredients: corn chips, flaked coconut, red jelly beans, raisins, oat cereal, candy-coated chocolates, chow mein noodles, peanuts, mini pretzels, and sunflower kernels.
