These graveyard cupcakes start with green-tinted frosting and graham cracker crumbs to resemble grass. Each cupcake is topped with a royal icing headstone and a piped meringue ghost with black gel eyes and mouth, making a cute yet creepy dessert.

  1. Mix green and yellow gel food coloring into the white frosting until you achieve a green shade.
  2. Place graham crackers in a food processor and pulse into coarse crumbs.
  3. Add a few drops of green and yellow food coloring to the crumbs and pulse to combine evenly.
  4. Continue pulsing until the crumbs are roughly the same green color as the frosting.
  5. Transfer the green frosting to a piping bag fitted with a medium round tip, such as a Wilton 2A.
  6. Pipe two layers of frosting onto each cupcake, leaving the center uncovered.
  7. Gently roll the frosted tops and sides of the cupcakes in the green graham cracker crumbs.
  8. Place a royal icing headstone on each cupcake as a garnish.
  9. In a bowl, combine the egg white and granulated sugar.
  10. Whisk until just combined, then set the bowl over a pot of simmering water.
  11. Heat the mixture, whisking occasionally, until it feels hot to the touch and the sugar has dissolved.
  12. Whip the mixture with an electric mixer until it holds soft peaks and has cooled down.
  13. Add the vanilla extract and whip until just incorporated.
  14. Spoon the meringue into a piping bag with a medium round tip and pipe a ghost shape into the center of each cupcake.
  15. Use a toothpick dipped in black gel food coloring to draw eyes and a mouth on each meringue ghost.
