- Process graham crackers in a food processor until they become coarse crumbs.
- Add a few drops of green and yellow gel coloring and pulse to mix the color evenly.
- Keep pulsing until the crumbs match the green shade of the frosting.
- Transfer the green frosting into a piping bag fitted with a medium round tip, such as a Wilton 2A.
- Pipe two rings of frosting onto each cupcake, keeping the center clear.
- Carefully roll the frosted tops and sides in the green graham cracker crumbs.
- Top each cupcake with a royal icing headstone.
- In a bowl, whisk together the granulated sugar and egg white.
- Whisk until mixed, then set the bowl over a pan of simmering water.
- Heat the mixture until it feels hot and the sugar is fully dissolved.
- Beat the mixture until it forms soft peaks and has cooled down.
- Mix in the vanilla extract and beat briefly to combine.
- Fill a piping bag with a medium round tip with the meringue and pipe it into the center of each cupcake.
