This gingerbread recipe combines the deep flavors of molasses, brown sugar, and Guinness with warm spices like ginger and cinnamon. The result is a tender, rich cake that bakes up beautifully in a 13x9 pan. It's great served warm or at room temperature, and stays fresh in an airtight container.

  1. Set your oven to 325°F. Grease a 13x9-inch baking dish generously, or line it with foil and then grease the foil for easier removal.
  2. In a medium saucepan over low heat, combine the butter, golden syrup, molasses, dark brown sugar, Guinness, cinnamon, ginger, cloves, allspice, and salt. Stir frequently until everything is melted and fully blended.
  3. Take the pan off the heat. Whisk in the flour and baking soda until no dry lumps remain and the batter is smooth.
  4. In a small bowl, whisk together the sour cream and eggs. Add this mixture to the gingerbread batter and whisk until well incorporated and even.
  5. Pour the batter into the prepared baking dish. Bake for 45 to 50 minutes, or until the edges start to separate from the pan and a toothpick inserted in the center comes out clean.
  6. Allow the gingerbread to cool, then cut into squares. Serve warm or at room temperature, and store any leftovers in an airtight container.
