Halloween Brain Mexican Dip - Souffle Bombay

This Halloween brain dip combines creamy cheese, spicy taco seasoning, and RO*TEL for a deliciously creepy appetizer. It's shaped in a brain mold, frozen briefly, then unmolded and garnished with extra RO*TEL to look like blood and guts. Serve with chips and veggies for a festive party snack.

  1. In a large bowl, beat the softened cream cheese, sour cream, and taco seasoning until smooth, using a hand mixer or a sturdy spoon.
  2. Fold in the minced jalapeño, sliced scallions, shredded Mexican cheese blend, and 1½ cans (15 ounces total) of drained RO*TEL, mixing just until everything is evenly distributed.
  3. Lightly coat the inside of a brain-shaped mold with nonstick cooking spray, making sure to work it into all the crevices, then give it a second light spray.
  4. Spoon the dip mixture into the prepared mold.
  5. Cover the mold with a piece of plastic wrap or parchment paper and press the dip firmly into all the grooves using your hands.
  6. Place the filled mold in the freezer for 1 hour.
  7. To release the dip, briefly submerge the bottom of the mold in warm water for about 30 seconds, being careful not to let any water touch the dip itself. The brain should slide out easily onto a serving platter.
  8. For a creepy effect, spoon some of the reserved RO*TEL over the brain to look like blood and brains, and insert a knife into the center for a dramatic touch.
  9. Serve with tortilla chips, celery, carrots, or any raw vegetables you like.
